Ingredients

For the cake:

  • 2 ½ cups (310g) all-purpose flour

  • 1 ½ cups (300g) granulated sugar

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 tsp cocoa powder

  • 1 ½ cups (360ml) vegetable oil

  • 1 cup (240ml) buttermilk, room temperature

  • 2 large eggs, room temperature

  • 2 tbsp (30ml) red food coloring

  • 1 tsp white vinegar

  • 2 tsp vanilla extract

For the cream cheese frosting:

  • 1 cup (225g) cream cheese, softened

  • ½ cup (115g) unsalted butter, softened

  • 4 cups (480g) powdered sugar

  • 1 tsp vanilla extract


Instructions

1. Preheat and prep:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Mix dry ingredients:
In a bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.

3. Mix wet ingredients:
In another large bowl, whisk together oil, buttermilk, eggs, food coloring, vinegar, and vanilla extract.

4. Combine:
Gradually add the dry ingredients into the wet ingredients. Mix until smooth and well combined.

5. Bake:
Divide the batter evenly between the two pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then remove from pans and cool completely on wire racks.

6. Make frosting:
Beat cream cheese and butter together until smooth. Add powdered sugar gradually, then beat in vanilla. Mix until fluffy.

7. Assemble the cake:
Spread frosting between layers and over the top and sides of the cake. Decorate as desired.
